A nice simple dinner

After a long day breaking up rocks in the mine it's nice to come home and cook a simple delicious somewhat nutritious dinner.

Ingredients:
1 shallot chopped fine
2 cloves of garlic chopped fine
12-15 cherry tomatoes
1 package of italian turkey sausage spicy or sweet, but I prefer spicy (about 1lb)
12-15 small portobello mushrooms
1 tbsp butter
1 tbsp of olive oil
2 Tbsp of white wine
2 Tbsp of fresh chopped basil
1 package of fresh pasta, such as cheese and roasted garlic tortellini

If turkey sausage is raw place it in a pan with enough olive oil to cover bottom of pan,  and brown it well. Take out of pan and in the pan Place butter and olive oil and heat to medium high. Once butter is melted add shallots and garlic and cook for a few minutes. To that add mushrooms quartered and then add white wine. Turn flame up to high and let the wine cook down until there is almost no liquid left in the pan. While that is cooking put the tomatoes in a pan and combine with olive oil,  1tsp of salt and 1/4 tsp of pepper and mix well. Put the tomatoes in the broiler for about 5 minutes until they are shriveled and breaking apart. Place the tomatoes and the turkey sausage into the pan and let it all cook together for 8 minutes until sausage is cooked through. Add two pinches of sugar to pan and a pinch of salt.
Meanwhile cook pasta as directed on package. Drain pasta and add it to pan with the other ingredients and combine well.  Add fresh chopped basil and add grated parmegan cheese and serve to hungry gratified people!!
